We love sweet potatoes and with this recipe, you’ll have everyone around you liking them too! They are a great snack or can serve as a side for dinner.
Not only are they yummy, but your body is going to love you for indulging in something so good for you. Sweet potatoes containing beta-carotene that gives your skin a nice glow, have anti-inflammatory benefits (which can help out high blood pressure), potassium and fiber (The list could go on, but we’re too excited to share the recipe!)
What you’ll need
Sweet Potato (or a few)
Green Onion
Olive Oil
Thyme
Pepper
Red Pepper Flake (optional)
What to do
Preheat oven to 375. Chop up your sweet potato (or more if you are cooking for others) and place in bowl. Toss in
olive oil (just enough to coat). Season with thyme and pepper-red pepper flakes if you like things a little spicy. Bake for 15 min. in oven. Remove from oven and scatter chopped green onion on sheet with sweet potato. Place back in oven for another 10 minutes or until potato pieces are soft. Remove from oven. Let cool for a few minutes and serve! That is it. Oh, and enjoy!
