Next time you are tempted to go grab a bag of chips, or a sugary cereal to satisfy your need for crunch, try these roasted chickpeas out instead! I know, it doesn’t seem like a fair swap does it?! But you’ll be pleasantly surprised at how satisfying these chickpeas can be.
Oven Roasted Chickpeas
- 2 cans no salt added chickpeas, rinsed, dried and skin removed
- 2 TBS (or less) olive oil
- Pinch of salt
- Cayenne pepper
Pre-heat oven to 400 degrees. Rinse and remove skin from chickpeas. Next, make sure they are dried off, and place in medium sized bowl. Toss in olive oil, pepper, pinch of salt and cayenne pepper. Place on baking sheet and bake for 30-40 minutes, stirring 1-2 times.
Remove from oven, grab a handful (after they aren’t hot of course 🙂 and enjoy this healthful snack!
