Start your morning off right with a pancake that won’t derail the diet and will leave you amazed at how tasty healthy can be. The foundation of this recipe is oats which are a whole grain = great for your heart, can help keep the bad cholesterol in check, enhance you immune system, and stabilize that blood sugar (check out why else food choices may be zapping your energy) Try them out. The worst that could happen is you’ll love them!
Cinnamon Spice Protein Pancakes
1.5 c old fashion oats
1-1.5 c unsweetened vanilla almond milk
1 egg
1/2 c unsweetened cinnamon applesauce
1/4 c pumkin
Lots of cinnomon
1 TBS vanilla protein powder
Sliced strawberries
Blackberries (or berries of your choice)
Honey (optional)
*Note this makes my my batter for the work week – 3-4 pancakes for 5 days – and is stored in the refrigerator for quick access to make pancakes each day.
Preheat stove top to medium-heat while making batter. (If pan is not heated before pouring in batter, you may end up with one large pancake.)
Grind oats in blender to make oat flour. Add protein powder and cinnamon. Blend. Add in wet ingredients and mix until combined.
Spray skillet or pan with olive oil cooking spray. Poor 1/4 batter into pan per pancake. Cook 2-3 minutes per side. Add berries and a little honey.
